Use your leftovers and transform them into new dishes. Good for both your wallet and the environment! Here are our best tips:
A classic is of course making pyttipanna. But did you know that pytt can be made just as well with pasta as with potatoes? Also try making pytt with root vegetables other than potatoes.
Cooked too much rice? Try frying the rice and mixing it with, for example, minced chicken, broccoli and eggs. Top with peanuts and lime.
Leftover meat or chicken for dinner? Make your own broth! Throw them in a large pot. Roast and then fill with water until the bones are covered. Simmer gently under a lid for 24-48 hours. Strain and store in jars in the refrigerator.
Don't throw away your dry bread. Cut it into cubes and make croutons. Place the pieces of bread on a baking sheet, set the oven to 200 degrees and bake until the croutons are crispy and golden brown.
Don't throw away the potato skins either! Make chips out of them. Soak the skins in water for an hour or so. Dry them and mix with salt and oil. Place on a baking sheet lined with parchment paper and put them in the oven at 225 degrees until crispy!
Peels from organic apples and oranges work great for making a delicious jam. Boil the peels in water for 25-30 minutes, strain and continue to boil the liquid over high heat together with a little lemon juice before pouring into sterilized jars.
Smoothies are an easy and successful way to use up brown bananas, fruit and berries that are starting to get overripe. If you don't feel like a smoothie right now, you can freeze them in ice cube trays and blend them up when you feel like it next time.
Do you have a lot of vegetables left over? Make an omelet. Fry vegetables of your choice and other leftovers and pour over an omelette batter. Top with some cheese if you like.
Save the stems of kale and broccoli. Cut them into smaller pieces and fry with a little olive oil and garlic, and voila, you have a healthy snack for dinner!
Also save the wine leaves and freeze them as ice cubes. You can use them in a pot of risotto or pasta.
