Do you feel like making something really delicious during the midsummer weekend? Here's a great tip for a Raw Jorgubbstårta. I found the recipe at Vilhelmsro Gårdscafé , which has been designated a White Guide Café in 2018. So if you're in the nooks and crannies of Falköping, you can't miss their place! THEY, in turn, had taken the recipe from the bookRAW FIKA. The circle is closed! Varsego! Those of you who have made it will understand!
Ingredients
Bottom:
3 dl almonds
15 common iodates
2 tsp vanilla powder
1 teaspoon salt
Filling 1 (cream):
2 tbsp lucuma powder (can be omitted)
5 dl cashew nuts
1 tsp vanilla powder
1 cup honey
1 cup water
1/2 cup squeezed lemon
2 dl cold-pressed coconut oil
Filling 2:
Half of filling 1
450 g strawberries (frozen, thawed or fresh)
1 1/2 dl cold-pressed coconut oil
1 tbsp honey
DO THIS
– Mix all ingredients together in a food processor until the dough is smooth and holds together. Press out the dough and press into a springform pan.
– Mix all ingredients for filling 1 until smooth, pour half of the batter over the bottom.
– In the rest of the batter, add strawberries, coconut oil and honey, mix again and pour over the first filling.
– Place in the freezer and decorate with fresh strawberries before serving.
