You can eat both the flower and the leaves as they are in salads or shred the leaves into a salad dressing, spiced butter, dip or soup. The flowers are great for decorating starters and salads. You can also dry the leaves and make your own herb salt. They are also good to fry with butter and salt as an accompaniment to fish dishes, for example. And if you haven't found ramsons this year, you can take comfort in the fact that you can just as easily make onion pesto – it's super delicious with pasta and barbecue!
It is almost impossible to confuse the towering onion plant with any inedible plant. The heart-shaped leaves at the bottom, the nettle-like leaves at the top and the small white flower combined with the noticeable garlic scent make it easily recognizable.
A useful weed like this deserves a better fate than ending up on the compost heap or just sitting around drying out. So go out and find this little gem – now is the best time!
